CAMPFIRE COOKING: 10 SIMPLE ONE-POT MEALS

Tired of the same old trail mix and energy bars? Elevate your backpacking meals with these delicious and easy-to-prepare one-pot dishes. With a little creativity and a few key ingredients, you can transform your campsite into a culinary adventure.

Loaded Mac and Cheese: A classic comfort food option. You can doctor up store-bought mac and cheese with dehydrated vegetables, bacon bits, dried beef, instant beans or even a chopped up energy bar or tuna packet. Powdered whole milk or butter powder can add creaminess.

Cheesy Chicken and Rice: A hearty and satisfying meal. Combine pre-cooked rice with chicken or sausage, broth, vegetables and your favorite cheese.

One-Pot Pasta Primavera: This is a great way to use up any leftover vegetables you have on hand. Simply cook pasta according to package directions, then add in your vegetables and a light sauce. You can use olive oil, pesto, or even just a little bit of butter and Parmesan cheese.

Spicy Sausage and Bean Stew: A delicious and protein-packed meal. Sauté sausage with onions and peppers, then add in beans, diced tomatoes, corn, and your favorite spices. Simmer until everything is heated through.

Lentil Soup: A healthy and vegetarian option. Cook lentils with broth, vegetables, and your favorite herbs and spices. You can add in a squeeze of lemon or a dollop of plain yogurt for extra flavor.

Tuna Noodle Casserole: A childhood favorite that's easy to make on the trail. Cook noodles according to package directions, then mix them with cream of mushroom soup, tuna, peas, and corn. Top with breadcrumbs or crushed crackers and bake until golden brown. (Pre-make this at home, dehydrate it, and rehydrate on the trail.)

Chicken and Veggie Stir-Fry: A quick and easy meal that's perfect for a cold night. Sauté chicken or tofu with vegetables and your favorite stir-fry sauce. Serve over rice or noodles.

Breakfast Burrito Bowl: A hearty and delicious way to start your day. Cook scrambled eggs with sausage or chorizo, then add in black beans, rice, cheese, salsa, and avocado.

Instant Pot Curry: A flavorful and warming meal. There are many pre-made curry pastes available that you can use to make this dish. Simply sauté some vegetables with the curry paste, then add in coconut milk, chicken or tofu, and your favorite vegetables. Simmer until everything is cooked through.

Ramen Upgrade: Take your instant ramen to the next level by adding in some protein and vegetables. Cook the ramen according to package directions, then add in cooked chicken, sausage, or tofu, as well as some frozen vegetables. You can also add in a fried egg or a dollop of peanut butter for extra flavor and protein.

From hearty stews to comforting pasta dishes, these recipes offer a variety of flavors and nutritional benefits. So, grab your pot, gather your ingredients, and get ready to enjoy a delicious and satisfying meal under the stars.
